Seafood Laksa With Coconut

Fragrant ginger and fresh herbs mingle with rich coconut milk and Reames® Homestyle Noodles to season this delicious seafood soup.
Heat oil in a large pot. When hot, add ginger, garlic and pepper and sizzle for a couple of minutes.
Add turmeric, lime juice and zest, coconut milk, stock, sugar and fish sauce, and simmer for 10 minutes. Taste and add more sugar, fish sauce or lime juice, as needed.
Meanwhile, bring a pot of salted water to a boil. Drop in the noodles and cook until al dente. Drain and set aside.
Add seafood and shrimp and cook about 5 minutes, until cooked through and/or clams/mussels open (discarding any that do not open). Divide noodles among bowls. Spoon laksa over noodles and top with herbs and cayenne peppers. Serve with lime wedges.
