Asian Noodle Salad in Mason Jars

Sure to please all palates, this vegetarian delight offers an Asian flair in the kitchen with a hearty base, made of pepper, edamame, carrots, green onions, and peanuts, and dressed in a spicy peanut butter sauce.

Serves  4




Step One:

Bring pot of salted water to boil. Add noodles and cook until al dente. Rinse under cold water and drain.

Step Two:

In a small bowl, whisk together peanut butter, sambal or sriracha, rice vinegar, soy sauce, oil and honey. Whisk until incorporated.

Step Three:

Divide spicy peanut dressing equally among 4 pint-sized, wide-mouthed mason jars. Divide noodles over dressing. Layer remaining ingredients.

Step Four:

Top with toasted peanuts.

Step Five:

Top with lids and refrigerate up to 5 days.
