Turkey and Kale Soup With Noodles

Tame growling bellies with this hearty soup loaded with veggies, ground turkey, bright green kale and Reames® Homestyle Egg Noodles.

Step One:

Heat 1 tablespoon oil in a skillet. Add sausage, turning every few minutes until browned on all sides and cooked through. Slice into 1/2-inch slices. Set aside.

Step Two:

Heat remaining oil in a large soup pot. When hot, add onion, carrot and celery and sauté, stirring frequently until vegetables soften, about 7 minutes.

Step Three:

Add garlic and sauté an additional minute. Add broth, tomatoes and thyme and bring to a boil. Stir in the kale. Season with salt and pepper. Reduce heat to medium-low, cover and simmer 15 minutes.

Step Four:

Meanwhile, bring a pot of water to a boil. Drop in the noodles and cook until al dente. Add cooked noodles and reserved sausage to the pot and cook an additional minute until warmed through.

Step Five:

Ladle soup into bowls. Sprinkle with parsley and Parmesan.
